How to Eat More Greens

We all know that vegetables are good for us. And a lot of us are in a constant quest to eat more greens. But every time we vow to eat healthier, our gut instinct is to reach for a salad. And for good reason! Green leafy vegetables are packed with vitamins, minerals and phytochemicals! They are also full of fiber, which helps you feel full without all the empty calories.

We stick to our salad diet for a while, enjoying different toppings and dressings and making it as exciting as possible. But, one can only eat so many salads! Don’t get me wrong, I love a good salad, but it’s certainly not the only way to take in the goodness of greens!

Here are 5 creative ways to sneak in more greens into your meals. It’s a great way to keep things interesting for you, and if you have kids, it’s a wonderful way to get them to eat more greens as well!



  1. Breakfast

Who said you can’t have greens for breakfast? It’s not too hard at all! Throw some greens into your omelette or scrambled eggs, or try these yummy make-ahead muffins. Craving for something sweet? Chelsea clinton’s idea of sneaking them into pancakes isn’t too bad at all! Though twitter had a total meltdown, I think it’s an awesome idea!

2. Chips

You heard it right–chips! One way to eat more greens is to make something you love to eat! If you’re a savory snacker, try making a batch of kale chips. They’re super easy to make and are a million times healthier than your favorite store bought crisps!


Think of the lettuce as a vessel and the opportunities are endless! The most obvious way is to replace your flour tortillas with some lettuce and make it a lettuce wrap! Take it to the next level and substitute taco shells, burger buns, and tortilla chips with your favorite greens! You cut down on empty calories significantly, without having to cut down on flavor.



4. Soups and Stews

Another easy way to eat more greens is by adding them to your soups and stews! You can simply throw in some veggies into your famous chili recipe and you’re all set! Not only are they hearty and healthy, they’re super easy to make too! Just add all the ingredients in a crockpot, leave it for a few hours, and enjoy! 5. Drinks!
